11/05/2020

Having the best tastes of Portugal at your table is not a very difficult task. You just have to find good quality ingredients and follow this recipe shared by Ana Rita Santos, a Promoter from UCI Portugal, well known for her culinary skills. You can start drooling.

Ingredients for 4 people:

  • 2 steaks of dried salted codfish
  • Olive oil
  • 1 onion
  • 2 cloves of garlic
  • 3 potatoes or 1 bag of potato sticks
  • 4 eggs
  • 4 table spoons of cream
  • Corianders
  • Olives
  • Salt and pepper

1st step

Cook the codfish in boiling water for 5 to 7 minutes, be careful not to leave it boiling for to long or the codfish will be dry and too cooked.

Then you gently shred the codfish, removing all fish bones.

2nd step

If you don’t want to buy a bag of potato sticks, you must peel the potatoes and slice them on small sticks. Fry them until they’re gold and then dry them on kitchen paper. Season with salt.

3rd step

Chop up the onion and garlic cloves.

4th step

In a frying pan, fry the onion and garlic cloves in 4 to 6 table spoons of olive oil until golden and add the shredded codfish, cooking it for 5 minutes. Then add the fried potato sticks and stir, to mix it all up.

5th step

Beat the eggs with 4 tablespoons of cream and season it with salt and pepper. Then add the eggs to the sautéed codfish and potatoes, stirring quickly so that the eggs don’t become dry. Take it from the stove.

Add chopped corianders and some olives on the top and serve it with a salad.

And then you just have to imagine the warm sun of Portugal while you eat it and let your mind travel to one of the best destinations of the world.
